It’s made exclusively from the Nero di Calabria pig’s cheek; it’s a lean and fine grain fat composed cut of meat. It’s flavoured with chili pepper and other natural spices therefore salted and massaged daily in order to get the right point of taste. Finally left seasoning until it’ll be ready.
